Whats Cookin' Wednesday ~ Homemade Pizza

 
Happy Wednesday !
It's been a crazy few days, I played hookie from work yesterday because I was a little pooped & we were having a nasty Nor'Easter. It was the perfect day to get under a blanket and watch Christmas movies and bake cookies!
On Monday night I made pizza. (last night was my chicken rice soup I had stashed in the freezer) tonight is going to be take out or going out because I work from 7-3 then pick up my nephew from school at 3:10 then scoot over to my moms until 4:00 then little man and I leave for CCD, I teach CCD from 4:30-5:30, then clean up after the kiddos leave, drop little man off to my brothers and head home which is 25 minutes from my brothers. So I don't get home until 6:30/7:00 on Wednesdays. My hubby either has dinner ready or is ready to head out the door!
Anyway... back to my Pizza... it was SO delicious. We make pizza all the time, but this was a new sauce I made. Usually I roast tomatoes with olive oil and garlic and just throw them on top of the dough with fresh mozzarella. I tweaked the whole thing for Monday...
 

Here is what you need for the sauce:
1 to 2 tablespoons of olive oil
3
cloves garlic, minced
1 small/medium onion, chopped finely
1/2 cup
chicken broth
1 28oz can of crushed tomatoes (I use San Marzano)
Salt and pepper
Pinch sugar
1 teaspoon dried oregano
8 to 10 fresh basil leaves, chopped (Or a few sprinkles of dried)
Here is what you do:

Add a tablespoon or so of olive oil into a hot pan over medium/high heat. Throw in the garlic and chopped onions and give them a stir. Cook until the onions are soft, about 4 to 5 minutes. Add the chicken broth, whisking to deglaze the bottom of the pan. Cook until the liquid reduces by half. (I put this mix into a mini food processor so my sauce is extra smooth) Add the crushed tomatoes and stir to combine. Add salt and pepper to taste and a pinch of sugar. Add the dried oregano and basil. Reduce the heat to low and simmer for 30 minutes.

Next up - If you like, sautee some sausage in a skillet with a little garlic
 
 
Have your husband pick up a dough from your favorite local pizza place because it's way easier than making your own and probably more tasty.
Spin your dough in the air like an Italian chef and spread it onto a pizza stone
You  can use a pan if you don't have a stone, but seriously, invest in a stone, they are the best. Pop it in a preheated 450* oven for about 6-8 minutes until the crust bakes a bit


 And if he's the best hubby, he'll scoop up some amazing garlic knots because he knows they are your favorite...

You should smell these babies
 After you pull your crust out of the oven, spoon some sauce all over it 
 
Go ahead and cover it really well

 
Throw on your sausage

 
Then sprinkle on your cheese.
I use a mozzarella provolone mix

 
Pop it into the oven (450*) until the cheese is melty and delicious

 
Slice it up and serve! Yummm
 
In other news, we had our first taste of snow on Monday... the top is looking out the door at work... the bottom is Aruba.... Hmm

Whats Cookin' Wednesday

Spaghetti & Meatballs
 
Meatballs:
1 1/12 pounds Ground Beef (You can use the mix but I prefer all beef)
3 cloves Garlic, Minced
3/4 cups Italian Bread Crumbs
2 whole Eggs
3/4 cups Freshly Grated Parmesan
1/4 cup Flat-leaf Parsley, Minced
Salt & Freshly Ground Black Pepper
Splash Of Milk
1/2 cup Olive Oil (for frying)
Sauce:
1 whole Onion, Diced finely
3 cloves Garlic, Minced
2-3 whole cans (28 Oz) Crushed Tomatoes
Salt & Pepper
1 teaspoon Sugar
1/4 cup Flat-leaf Parsley, Minced or some dried parsley
8 whole Fresh Basil Leaves, Chiffonade (optional) or a bay leaf
2 pounds Angel Hair, Cooked To Al Dente
 
To make the meatballs, combine meat, garlic, breadcrumbs, Parmesan, eggs, salt, pepper, parsley, and a splash of milk in a mixing bowl. Mix together well with hands. Roll into  1 1/2-inch balls and place on a cookie sheet. Place cookie sheet into the freezer for 5 to 10 minutes to firm up.
To brown the meatballs, heat olive oil in a heavy pot or large skillet over medium-high heat. Add meatballs 8 at a time, turning to brown. Remove and drain on a paper towel after each batch. Set meatballs aside.
After the balls are cooked, in the same pot, add the onions and garlic and cook for a few minutes, or until translucent. Pour in the crushed tomatoes. Add salt, pepper, sugar, and parsley. Stir to combine and cook over medium heat for 20 minutes.
Add meatballs to pot and stir in gently. Reduce heat to a simmer and cook for 30 minutes, stirring very gently a couple of times during the simmer.
Just before serving, stir in basil if using.
Serve over cooked spaghetti. Sprinkle with extra Parmesan.
I serve this with garlic knots, or fresh crusty Italian bread
 
I made this on Sunday, packaged it up to freeze/store and we had it for dinner on Monday.
It was delicious. Of course I made enough for 9 people when it was just the 2 of us eating.

Come On In....Christmas Decorations!

I love decorating our home for any holiday but Christmas is my favorite and I have TONS of decorations, but not enough space to put them all.... Hopefully next year we will have more room in our new house!!
Ok, on to the decorations!

There simply is NO greater scent than Fresh Balsam or Christmas Tree or anything that smells like Christmas really.... love love love
 
Anna Lee doll ~ My mom has a HUGE collection, she bought me this a while back.... And that wood reindeer was a Homegoods purchase 2 years ago. Love him!

Bought this "candle" at a little market near my house a few weeks ago, I thought he was way too cute not to come home with me!  
 
Every year my mom and I go to this place called Opdykes ~ They feature crafts and local artists work etc. That snowman is from there. He went missing in my moms basement, but was luckily found last year! And under my candle is a Santa on a tricycle pulling a little cart full of candy canes
 
This was a gift to my mom from my 6th grade teacher who we happened to be family friends with. It lights up. And in our next house, hopefully I'll have somewhere to hang it and plug it but for now it's situated above my hall mirror 
 
I got this last weekend at a market in Monmouth County called Sickles Market ...
My mom and I got lost in this place. It was amazing.

Our Pottery Barn stockings! We don't have a fireplace, so I have no mantel to hang them on so I need to get creative. Last year I hung them from the entry table but I didn't like that. I think this year I'm going to get one of those decorative ladders and lean it against the wall and hang them from that. I know you've all seen that on Pinterest!

Well there you have it! Our home. We will cut down our tree this weekend and decorate it as well as put up our outside lights. I just LOVE Christmas!
I wish I had the whole month of December off to really enjoy the season.
 
In other news, our house is OFFICIALLY on the market as of yesterday afternoon and the sign went in the yard last night! Prayers for a quick sell so we can get out of the town we're in and into a town we love and into our forever home!!
