Ted & I had to go to UPenn last Wednesday for a little checkup (good things)
While out near Philly, we love to grab a bite to eat at two awesome places.
The first being Kermits Bake Shoppe, which is right in Philly.
Our friend from high school (who happened to be on The Next Great Baker with Buddy Valastro) opened the bakery and makes amazing things... He has since moved on to bigger and better things but we still LOVE to hit them up when in town...
One of our favorite things to get from Kermits is the pizza...
OMG the pizza.... It's beyond gourmet.

Are you kidding me? General Tso's PIZZA!? It was delicious!
As were both of the others, but The Kerminator is my favorite.
 
The other favorite place to eat is ZinBurger - I've mentioned this before... it's amazing.
Best burger I've ever had. I mean......

Over the long weekend we watched the movie "Non-Stop" with Liam Neeson.
O.M.G.

He is quite possibly one of my favorite actors.
His films are always so action packed and he always always plays a bad ass dude!
I was completely hesitant to watch this movie because any movie about planes going down or being hijacked is just NOT my cup of tea... I'm a fan of flying, but it also scares the bajeezus outta me #amenforxanax
This movie was SO GOOD though. It really kept you roped in throughout the entire thing. You kept thinking the "bad guy" was this one, no that one, no this one! It was good.
I highly recommend it.
 
Since I did my Mid-Month Confessions on Monday and my Show & Tell Tuesday of how I met my hubby - I didn't recap the weekend as much but my favorite part was spending our first Valentine's Day together as husband and wife at home, with take-out from our favorite restaurant....

Since I mentioned in my Mid-Month Confession, that I had had shingles, which was NOT at all my favorite and looked like a cling-on - I felt it only fair to share a picture... this was after I began taking the medicine, so the swelling was going down... It was bad... and hurt like a bi-otch.  
 
 
Still on the house hunt... Still waiting to sell our current house and STILL really wanting new construction... I passed by this yesterday. It's one of my favorites.
I look at the listing pretty much every day.
Where we are looking, since it is so close to waterfront, yard size and house size are a huge factor. You either get a big yard with a tiny beach bungalow house on it, or a new house where they tore down said bungalow on the large property and sub-divided to put two new ones.... Ted wants property, I want a new house - we're trying to find the happy medium :)
I guess it is a little close huh? :-(

I took this picture on Tuesday during the end of the snow storm. All the little birds came out to eat from the bird feeder and these two crazy girls were watching them plotting their escape and attack.
Neither of them ever set foot outside, but they can dream...
It's my favorite, because they are NEVER this close to each other.
I dream that they become BFF's and snuggle one day....

Thinking out loud Thursday & Homemade chocolate syrup

This week has been somewhat crazy... We had a snow storm Saturday, our pipes froze Monday morning because it is and has been SO DANG COLD here in Jersey... then we had another snow storm Monday night into Tuesday which gave me a snow day Tuesday! (WooHoo) Wednesday was so busy at work with catching up from 4 days off...
So today, it's a little  bit of this and a little bit of that...

Since we have been SERIUOSLY struggling to get out of the single digits lately, and have been "feeling like" its in the teen negatives, we have been doing a heck of a lot of staying inside under blankets. It's just been too dang cold to even move.
This was Monday morning.
The morning our pipes froze.
Luckily my handy hubby caught it before things got bad.

In other news..... I've been a cooking/baking machine lately. I've really gotten back into the swing of cooking every night (with the exception of Valentine's Day)

We had gotten steaks from Costco and I wanted to make them extra delicious, so I googled up a "rub" that involved coffee and chipotle.
I picked a few and kind of combined them and came up with this amazing rub that I did the day before so it had plenty of time to marinate those big steaks. I impressed myself with this one. O.M.G. it was amazing. I'll have the recipe up soon...

Roasted Cauliflower

I made my favorite meatloaf on Monday night...

Bacon wrapped meatloaf with this amazing spicy sweet sauce on top.
It doesn't get any better....oh wait, add creamy mashed potatoes!
Soooo good!!

 I also whipped up brownies...
I did a box of Duncan Hines and added chocolate syrup & chocolate chunks to the batter and baked at a lower temp for a longer time so they were nice and moist and chewy!
 
Brownie a la Mode anyone
 So here's the thing, I ran out of syrup - so I made my own....
super easy - 

Chocolate Syrup
1 cup unsweetened cocoa
2 cups sugar
1/4 teaspoon salt
2 cups cold water
1 Tablespoon Vanilla extract
(I halved this recipe because it makes quite a bit)

Whisk together cocoa, sugar and salt in a 2 or 3 quart saucepan.
Whisk in cold water, continue whisking until lumps are gone.
Cook on medium-high heat, bringing to light boil for 3 minutes
(Keep whisking occasionally, don't let burn)
After 3 minutes, remove from heat.
*it will still be thin*
As it is cooling, add the Vanilla extract
Pour into a re-sealable container after it's completely cooled
It will keep for a month!


This is what I'm dreaming about.....paradise...

 
Especially Aruba... sigh.... 


After all this cold ALL week/weekend, I'm seriously craving some warmer weather.
3 different people I know were in Aruba last week at the same time.

What's Cookin' Wednesday ~ Stuffed Peppers

Stuffed Peppers
Makes: 16 halves
Prep Time: 20 minutes
Cook Time: 2 hours
 
 
What you need:
2 Green Peppers
2 Red Peppers
2 Orange Peppers
2 Yellow Peppers
(You can use your discretion on the pepper selection)
1 pound of Ground Beef
1 small onion, chopped
1  1/2 White Rice
1/4 cup of Worcestershire sauce, divided
Salt & Pepper
1/2 tsp garlic powder
1/4 cup Italian bread crumbs
 
1 -2  Large can(s) of tomato sauce
 
 
What you do:
 
Slice peppers in half length wise, remove seeds & stems, set aside
 
In a large mixing bowl combine ground beef, onion, rice, half of the Worcestershire sauce, a few dashes of salt and pepper, garlic powder and the bread crumbs.
 
 
In a large Dutch oven or large pot of your choosing on medium heat (I have an amazing old pot that was my great grandmothers), drizzle a tiny bit of olive oil.
 

Stuff the pepper halves with the meat mixture and set into the pot pepper side down.
 
Once that step is completed with all the peppers, pour the tomato sauce over top and add the rest of the Worcestershire sauce and place lid on top of the pot.
(I use about 1 and a half large cans of tomato sauce because I like my peppers saucy)
 
Let peppers cook for about an hour at that temperature then reduce the heat to medium low.
The longer they simmer, the more flavor you get!
 
Stir with caution and as needed
 
I serve this with egg noodles and corn
