What's Cookin' Wednesday
What You Need:
1 package of chicken breast, thinly sliced
1/2 cup flour
1/4 tsp salt
1/4 pepper
fresh parsley
2 TBSP Olive Oil
2 cloves garlic, minced
1 cup of mushrooms
1/2 cup Marsala wine
Chicken Stock for thinning
What you do:
Combine flour, salt and pepper in a large zip lock or bowl.
Coat chicken breasts in flour mixture
In a skillet, add oil until hot
Add in mushrooms and garlic
Cook for 5 minutes, add parsley
Sauté for a few minutes more
Add chicken to skillet - cook about 8 minutes, turning once
Add wine and cook 10 minutes
If at this point you don't have a lot of sauce, or it's too thick, add some chicken stock until you get the consistency you desire.
I served this with roasted potatoes and veggies!
You can add prosciutto to this also...
Or you can serve it over pasta!
I love this over pasta...you just may need a little more wine and stock to make enough sauce!
