Life Lately

I wish I had more exciting news to share, but unfortunately I do not.
We had a great house showing last weekend.
We were one of the persons top two homes he picked.
And alas, he chose the other house.
We were super bummed.
We really thought this was it!
It's so frustrating after being on the market for 8 months.
BUT - keep your fingers crossed that this showing we have today or the one
 we have this weekend is the one.

A few things...

Anniversary Trip

I've been going over so many different options for celebrating our 1 year anniversary.
This is a big deal - it only happens once...
Ideally I'd like to go back to Aruba...so would Ted... because well..



 
 But spending that kind of money on a trip as we're selling our house and buying a new one and trying to have a baby just doesn't seem like the best idea.
So we were talking about going somewhere in the country,
 possibly within 5 hours of driving distance.
We looked into Palmetto Bluff (Thanks to Heather)
We talked about driving up and around the New England states....
But now we're talking about going to St. Michael's in Maryland, thanks to Christina!
It's SO pretty and so close! I think this is going to be the winner!

I'm tired of grilling the same stuff...
I'm bored with chicken...
I need some hearty winter suppers
If anyone has anything exciting to make for dinner that they love, feel free to share...

Random Stuffs...

School starts back a month from this Sunday...
I can't believe how quickly the summer is flying by.
I'm ok with school starting because it's so boring here in the summer with no one around.

I'm looking forward to my cousin visiting again toward the end of August.
He's so much fun to have around.
~
I'm done with the summer really and can't wait for fall
Or Christmas for that matter.

Today I'm sharing with you one I've done before but it's just oh so good that I had to share again!! So get your eggs ready for some....

 
Cowboy Quiche

Here is what you need:

1 whole Unbaked Pie Crust (enough For A Deep Dish Pan)
2 whole Yellow Onions, Sliced Thin
2 Tablespoons Butter
8 slices Bacon OR Diced up Ham
8 whole Large Eggs
1-1/2 cup Heavy Cream OR Half-and-Half
Salt & Pepper, to taste
2 cups Grated Sharp Cheddar Cheese

Here is what you do:

Fry the onions in the butter in a large skillet over medium-low heat for at least 15 to 20 minutes (maybe longer), stirring occasionally, until the onions are deep golden brown.
Set aside to cool.
 
Fry the bacon until chewy. Chop into large bite-sized pieces and set aside to cool.
Or if using ham, dice up a ham steak (they are pre-cooked so just take out and chop up)
Preheat the oven to 400 degrees. Roll out the pie crust and press it into a large fluted deep tart pan (or a deep dish pie pan). OR you can use a store bought pie crust. I do this often because, well, it's just easier.
 
Whip the eggs, cream, salt and pepper in a large bowl, then mix in the onions, bacon, and cheese. Pour the mixture into the pie crust.
 
 
Place the pan on a rimmed baking sheet, cover lightly with aluminum foil, and bake it for about 40 to 45 minutes. Remove the foil and continue baking for 10 to 15 minutes, or until the quiche is set and the crust is golden brown. (The quiche will still seem slightly loose, but will continue to set once remove from the oven.)
 
 
Remove from the oven and allow to sit for 10 to 15 minutes. If using a tart pan, remove the quiche from the pan, cut into slices with a sharp serrated knife, and serve!
 
 
This is a huge hit with my hubby. He LOVES this. I have used this base and made it with Jalapenos and cheddar, or broccoli and cheddar. You could throw any veggie or meat you want in there. I also slice it into portions and freeze it so we can "grab and go" for lunches at work or on the weekend. The flavors in this specific quiche are outrageous!

Weekend Wrap Up

This weekend was great.
Flew by way too quickly, but we had fun!
 
My weekend started on Thursday at 11:45 when I left work...
 I love a 1/2 day before a 3 day weekend!
 
On Friday morning, I sent this to Ted ~
It's exactly what it says - in  Papiamento (their language)
 

It was also super chilly that morning so I opened up the windows and let the cool air blow through the house..

 
I went to visit my friend from work who just had a baby...
Then scooped up my brothers dog for an over-night at our house...
Got home, chilled for a sec and got a phone call that someone wanted to come look at the house.............
IN 15 MINUTES!
Thankfully, the house was clean, but not to the way I like it to be for a showing, but I wasn't in the mood and said oh well it is what it is.
Turns out its a couple relocating from Alabama who need a house ASAP!
So we got a call the next day and they are interested!!
Pray for us!! We need to sell so badly!
 
After all that chaos, I whipped up some turkey corn chili
 
The next day - we took this old boy back home and headed to the beach!

 
I'm about to sound really "Jersey" right now - but I just can't stand BENNY's !
For those who don't know, BENNYs are what the locals call people vacationing or visiting "the shore". No one that lives here calls it the shore. It's the beach.
BENNY stands for: Bayone Elizabeth Newark New York - but it pertains to anyone that's not a local really. Haha it sounds so mean, but it's just how it is.
Anyway, they stand out from a mile away.
They're wearing socks and sneakers on the beach...
They have 432 bags with them...
They lay the hotel sheet out on the sand...
They can't swim and don't understand the flags...
They are rude, listen to music loudly and smoke...
Now - I'm not opposed to someone listening to music, but at an appropriate decibel.
Saturday, we walked on to one of our "spots" on the beach.... pretty far down.
And sat down in our chairs...
There was a group of them next to us blasting offensive techo/rap music....
Chain Smoking...
and cursing in the foulest way possible.
I told Ted I wasn't about to sit there so we grabbed our stuff and relocated.
Now, this beach is 10 miles long, so relocating meant walking back over the dune to the truck and driving to a different spot.
Well we did, and we were almost alone!
 
It was perfect...

Then on Sunday I had my friends bridal shower...it was lovely
The 3 of us have been friends since Freshman year of High School...
 
Then Ted and I hit up our favorite Sunday spot to listen to our favorite band...

Pretty darn perfect if you ask me!

First of all, I can't believe that next week is the last week in July!
Wow ~ This summer is just flyyyyyying by!
So here are my faves for this Friday...
1.
I splurged at the Nordstrom sale and got a few things and decided to get myself this Clarasonic Mia that everyone is raving about.
Well. I love it!
I wish I had gotten it sooner!

My new Blardigan


Since I ordered one last year and absolutely fell in love with it, I decided to get another one while they were/are on sale. I opted for the lighter shade with the stripes this time because I have the grey/black one now. And this one is just as soft if not softer than the original.
It's just so comfy and perfect! AND - it will look cute with a white T and jeans this fall!

3.
Fridays Off
I know I've said this before, but it's really awesome having a 4 day work week.
I am LOVING having the 3 day weekend and it's really giving me the itch to have summers off. So I've been interviewing for different positions in my district that would allow me to be a 10 month employee instead of 12 #fingerscrossed

Soft Batch Cookies

These cookies were mine and my brother's favorite "store bought" cookie growing up.
(Moms homemade were the best!)
I recently bought a small 4 pack of these and was instantly reminded of being 6 years old eating these in my parents back yard with my brother.
They're so good.

 My best friend in Texas is just awesome.
I love her, I'd be lost without her and I wish so badly that we lived closer.
However, we make it work AND it's a great reason to take mini vacations each year! We used to have alllll those things that said Best Friends split in half. 
So when I saw these tanks I had to get them!

The three girls here (me, Katie & Meghan) have been friends since freshman year of high school. 
Katie got married last June. 
I got married last September and 
Meg is getting married this September. 
Her bridal shower is on Sunday!!
Excited to celebrate her and her soon to be hubby!! So fun!

10 *WEIRD* Things About Me!

On Monday, Shay did a "10 weird things about me" post -
so I decided to share some weird things about me too...

 

1.
I don't touch lemons. Ted has known about this since we met and is so aware of it that if a lemon comes on my water when we are out, he automatically removes it without me asking. It's pretty funny actually. I'll touch them if I'm home and can wash my hands immediately after touching them. Not sure why this is, it just is.

2.
I don't like anyone touching my ears. In fact I have hit people in the past for even coming close to grazing them. A few weeks ago at Acupuncture, my acupuncturist was going to put a channel at the tip of my ear and I about leaped off the bed at him. Bless his heart, he pulled his hand back SO FAST and was like woah what is that... I had to explain it to him.
 
 

3.
Speaking of my ears, I don't sleep at night unless my blanket is pulled up over my ear.
This goes back to when I was about 19 and had Bells Palsy. The Dr. told me that it likely came from a draft that caused an ear infection. Ever since then I cover my ear when I sleep (the other one is obviously on the pillow). Even if it's warm, I cover up. I know it's more psychological, but at this point, I've been doing it for like 14 years, so why stop now.
Bells Palsy was awful. Especially at 19 years old.

4.
I'm particular with soap. I don't use soap in public bathrooms. I have these soap sheet things that I keep in my purse at all times. Sometimes I have Ted test the soap in bathrooms to see if it's "stinky soap" or not. You know the one I'm talking about? That pink industrial strength garbage that makes your hands smell like chemicals and dust. Ugh, I gag just talking about it. So needless to say, I will avoid washing my hands if the soap is gross. I won't use the bathroom then if the soap is gross too. Haha - That's a weird one. I'm obsessive about it too.

This is what I keep in my bag - It works great!

5.
I say "I'm sorry little buddy" when I see a dead animal (ie: raccoon, possum, squirrel) in the road. I genuinely feel bad for the animal. No living thing deserves to get run over by a car and left to decay on the roadside. I usually only do this when I'm driving alone. And one time there was a cat that was hit right near our house. I was devastated. I asked Ted to cover it up and call the township. Which he did very graciously. The one and only time I hit an animal it was a squirrel. I pulled over and was hysterical. I saw two squirrels running around and go across the road then they turned around super fast, I hit one, the other turned back to look for his buddy, I lost it. 110% lost it. I was so upset. (I was about 18/19 and on my way to class at college) I called my mom hysterically and told her and she thought something tragic and awful happened. To me it was horrifying. I never drove down that street again. I think it was more seeing its friend look for him and realize he was gone....omg I get choked up thinking about it. This sounds crazy, but I have a big big heart for animals.
 
 
6.
I like my ice cream melted.
Not soupy melted, just really really soft.
I scoop it into a dish and let it sit for a few minutes, then swirl it around until its creamy.
THEN I eat it. But that's only when I eat it in a bowl because I hate when ice cream cones melt! hahaha It's funny how weird this all sounds when I type it!
Also, I'm not a fan of "soft serve" ice cream.
So strange... but it's how I roll!
 
 
7.
I wear tank tops under everything I wear. Always. Even my pajamas.
Even when it's 100* outside.
I don't feel "right" unless I'm wearing a tank under my shirt, dress, sweater etc.
I have lots and lots of styles; casual, tight, loose, cami, fancy, lacy etc.
Its like a clothing security blanket.
Been doing it for yearrrrrrrrs.
 
8.
I make lists for everything. E.V.E.R.Y.T.H.I.N.G.
I like to have things organized.
I make lists when we go on vacations.
I make a list for whoever watches our pets
I make shopping lists for any store I go to
I make lists for who I have to buy things for
I make tons of lists at work.
I have so many lists it's gross.
But somehow, it keeps me feelings organized.
One of the best things I got myself was the Erin Condren Life Planner
It's got so much room for list making!
I made lists for my wedding and honeymoon in there
lists for Christmas and birthdays!
Good stuff - can't wait to start on my next planner!

9.
Speaking of lists, this may or may not qualify for weirdness...
I plan vacations that we don't always go on.
I'll research places, flights, trips, everything to do with vacationing.
Write it all down in a pretty presentably way and show my husband.
He usually looks at it and says things like "sounds nice" or "yeah, that place looks good"
but we both know we aren't going to hop on a last minute flight to Barbados because there's a good deal. We are going away for our 1 year anniversary in September to New England, and I can't wait to seriously plan that.
I'm always planning a trip to Texas and presenting it to him.
Or planning a trip back to Aruba or across the country.
I planned out an entire trip to Disney complete with food and flights and park passes.
 
 
It's a weird thing I do I guess... And when other people tell me they're thinking about going somewhere I look and research for them whether they want me to or not.
I enjoy it - I should've been a travel agent.
But Travelocity & Expedia kinda took that idea away huh ?
 
Ain't that the truth!
 
10.
 I don't like listening to people talk about the gym or their workout.
I read about it on blogs all the time and that doesn't bother me.
It's being face to face with someone and they say things like, "my run today was so good, I think I burned a lot of calories" or "I don't feel good unless I workout" or just talk about what they did, or how good it was, or whatever it is about the gym or their workout.
I just don't care. I think it's great that people work out and spend time in a gym, and if I had the time in life to do that, I'm sure I'd do it too, but I work from 6:30am - 3:00pm then go home to laundry, dinner a husband and tons of other junk. I have DVD's and stuff to do at home, but in my mind it's always going to be half-assed.
Ted knows I hate when he mentions it. He'll say, "I know you don't care, but I lifted xx at the gym today" I usually roll my eyes and say wow that's awesome.
I don't know why or what it is, but I just don't care.
Call me rude, but it's just honest.
I also don't understand "checking in" on Facebook at the gym.
As if you need to tell everyone you're working out because if it isn't blasted all over social media it doesn't count?
 
 
Way to end it with a bang huh? Lol

WCW ~ CoCo Shake

The Best Drink Ever!

We had these on the way to our hotel from the airport in Aruba.
 
{side story}
Ted's parent's have a timeshare in Aruba and go every year. Sometimes twice.
They became friendly with a guy who lives down there who used to work at the hotel they have the timeshare in.
He and his lovely girlfriend picked us up from the airport for our honeymoon, complete with a sign and all - it was so adorable!
Once we were in his truck and heading to the hotel, absorbing the amazing Aruba air, taking in all the beauty and completely on cloud 9 because we had just gotten married, Eddie pulled off the road rather abruptly and was like, "hey you guys like coconut??"
We both said yes, and next thing ya know - we had these amazing drinks from a tiny roadside stand...something I never would have thought to do as a visitor, but something I totally trust the judgment on coming from a local!

Ok -  
So this is how the Coco Shake is concocted!
It tastes extremely similar.
It's not as out of this world as Aruba, but it's darn close.
They are a bit tricky to whip up - and I always make a mess doing so,
but they are worth it!
 
What You Need:
A coconut
10 oz Sweetened Condensed Milk
Whole Milk
Vanilla
Ice
Cinnamon
 
What You Do:
Retrieve your coconut meat from the coconut.
Not gonna lie, I had to YouTube this one...
OR you can buy the frozen fresh coconut from the grocery store.
Add it to your blender.
Cover with milk til the coconut is just about covered.
Strain the mixture over a bowl or large glass measuring cup so what you are left with is coconut infused whole milk (basically)
Put a couple of scoops of the meat from the strainer back into the milk mixture for texture.
Whisk in the sweetened condensed milk
Add a few splashed of vanilla extract (1-2 tsp) and whisk
*This is where mine is different from the video*
I then place that back in a blender with lots of ice to get that smoothie texture instead of straight up poured over ice.
Once I reach a good consistency (adding more meat/liquid as needed)
I pour it into a cup and top it with cinnamon!
It's so darn yummy!!!

If you've been reading my blog, you know that our current house is for sale so the pictures I'm going to share and from the listing because well, they are great shots of my house and the house looked great when we shot them.

It's pretty plain and boring, again because we're selling so
most of my "personal" things are packed up.
There isn't much on the walls.
At the end however, I'm going to share a few of the pictures of the house we have a contract on to move to as soon as we sell this one!
