Sweet Corn Turkey Chili

What's Cookin' Wednesday
~ Thursday Edition ~
 
This is a recipe I got from Shay's Blog - Her Post Here
I added a bit to it to create my own version...

So I saw this on her blog recently from one of her meal planning posts...
My husband loves chili - I am not typically a fan because I don't love beans.
I also just recently became a fan of ground turkey... so this dish sparked my interest when Shay wrote that it could be made with beef OR turkey!
 

What you need:
 
1 pound of ground turkey
1 onion, chopped finely
1 jalapeno, seeded and diced
2 tablespoons chili powder
1/2 teaspoon garlic powder
1/4 teaspoon cumin
1 tablespoon of Massa Meal
 1 (6 oz) can of tomato paste
1 (15 oz) can black beans, rinsed and drained
1 (14 oz) can of creamed corn
1 (14 oz) can of petite diced tomatoes
  1 cup frozen corn
Extra Virgin Olive Oil
Salt & Pepper
Sour Cream and shredded cheddar cheese to garnish (if you'd like)


What You Do:


 In a large pot over medium-high heat, brown the ground turkey in a drizzle of olive oil.  
Add in a good pinch of salt & pepper.  
Once browned & crumbly, stir in the chopped onion and jalapeno.  
Sauté a few minutes then add another little pinch of Salt & Pepper.  
Stir in your chili powder, garlic powder, cumin and massa.
Stir well to incorporate.
Next, add the tomato paste, beans, creamed corn and tomatoes.
Reduce heat to low and simmer about 10 minutes, stirring occasionally.  
Stir in the frozen corn and simmer another minute or two.
(I let this simmer on low for an hour)
Scoop out into a bowl and put a dollop of sour cream and some cheese on top!

What I'm Reminiscing About
I mentioned yesterday that it was the 2 year anniversary of when Ted asked me to be his wife. I can't believe we're coming up on a year being married. Time truly flies by.

What I'm Loving
I'm loving the idea of starting a family.
I can't wait to enter into that next chapter of our lives.
I hope God hears our prayers and makes us parents soon because we are so excited.
 
 
 
What We've Been Up To
We really haven't been up to a whole heck of a lot.
The weather was nice for a hot minute, then got craptastic again.
We really just keep pushing the sale of our house and hunting for a new one.
We're both still hung up on new construction so will most likely go down that road.
Other than that, we're just waiting for the weather to warm up so we can get outside and do yard work and ride our bikes and enjoy it.
 
What I'm Dreading
May at work - It's a long month.
It's very busy with exams, state testing, end of the year stuff, meetings, and only one day off for Memorial Day. It sounds silly, but I'm not a fan.
 
 
 
What I'm Working On
I'm working on my patience when it comes to selling our house.
I'm so anxious to get out of it and into a new one.
Especially because we want to expand our family... I want to be settled and in a new home sooner than later... So, I am working on being calm about it all.
 But it's difficult...because I keep day dreaming... #sorrynotsorry
I dream about this kitchen!
 
What I'm Excited About
 The yacht club to get finished!
This fall will be 3 years since Sandy.
As much as I wish I could forget that awful storm, I never will.
We lost our yacht club
(t's hard to see in the picture, but it's completely destroyed. It was sinkning, the bayside wall was blown in completely. The entire place was flooded with over 6 feet of water.
It was awful.
My brother is a member, my mom, my uncles/aunts, lots of friends, lots of neighbors...
We all miss it dearly. It was a great place to go grab a drink (CHEAP) and bar pie and hang out with good friends. They host lots of fun events as well throughout the year.
We're all anxious for the return of our club!
The builders have been making lots of progress lately...
 
 
I'll post more pix when I see more progress!
 
What I'm Watching/Reading
 Typically I don't "watch" anything religiously except Wheel of Fortune (haha)
I follow American Idol, if I remember
I also kinda follow Teen Mom OG - again, if I remember
I just kind of peruse the HGTV channel and watch all those shows
I also watch the cooking channel.
I just don't regularly watch something to the point that I HAVE to see it.

I'm reading Sean Lowes book  - haven't gotten much into it yet, but excited about it!
 
 
What I'm Listening To
 
 
During the week, while I'm at my desk, I have Pandora on.
It's on shuffle and includes stations like this:
Bob Marley, Sounds of the Incas, Michael Buble, Todays Country...
I also have the Furious 7 soundtrack on my iPod which I listen to in my car.
 
What I'm Wearing
Work clothes. Blah.
I'm loving dropping coats and scarves and the bulk though.
I love capris and sanuks
But especially love maxi dress "season"
Looking forward to dresses and flip flops..

 What I'm Doing This Weekend
 A whole lotta nothin'
Honestly, I love not having plans. I'm sure my weekend will be full of lots of different things, but for right now - we have no concrete plans.
And I'm ok with that.
I'd like to go scope out the beach...
 
I seriously adore where we live....
 
 
What I'm Looking Forward To Next Month
I'm looking forward to Mother's Day. I love celebrating my amazing mom.
She is my absolute hero.
We danced at my wedding to "Somebody's Hero" by Jamie O'Neal
I admire her strength
I have always looked up to her and wanted to be just like her.
She is amazing.

What I'm Getting My Mama For Mother's Day
I haven't QUITE decided on this just yet. 
 I thought about getting her a Barrington Tote - but I think it might be too big for her.
I also thought about taking her somewhere for the weekend...
Either way, she will know how much I love and adore her.
No gift could ever do it any justice.
She deserves the world...

Weekend Wrap Up

The last weekend in April - SERIOUSLY?!
 
Thursday night we went to a Mexican restaurant up near my mom that we love.
We both had enchiladas.

 On Friday after work - We made the executive decision to once again, eat Mexican for dinner...but at our favorite "Cali" style Mexican place.
I'm sure I've mentioned it before, but it was on Diners Drive-In's & Dives.
 
 
 
We had seen them on the show and saw that it was super closet to us, so one day about 4 years ago, we headed up there to give it a try.
Since the show, they've had tons of success and opened up 2 other locations and expanded the original one. It's seriously delicious. And they make the best margarita!

We shared chips and guac/salsa
It was amazing.

Then Friday night, we watched Fast & Furious (#4)
 
 
but we stopped halfway through so I could watch the Bruce Jenner special.

Saturday morning we got bagels from out favorite bagel place...
 
 
....then headed up to my moms for a little bit.
After that I whipped up some brownies for Ted's parents to have when they got home.

We went home and cleaned up a bit, and did some yard work.
Then headed to the movie theater to see Furious 7 again.
We're obsessed. I told you.
 
We had to kill time though because we had to go to the Newark airport to pick up my in-laws who arrived at 10:15pm
So we killed the later part of the evening with a movie :)
 
After the movie, we headed up to Newark to scoop up Ted's parents from Aruba.
lucky ducks... I'd live there if I could I swear.
I mean...
 
 
After they got to us, and we dropped them off and got home, it was 1:15am

Sunday was pretty low key...
 
Ted had softball and I did laundry...
We took a drive and enjoyed the nice weather then stopped by his parents to talk about their trip some more and visit with them a bit.
Then we headed to my moms for Sunday dinner with the whole fam.

All in all - pretty low key weekend but relaxing and fun at the same time.

Favorite Things Party

Favorite Accessories

I'm pretty boring in this department, but I do change it up on occasion.
 
In terms of jewelry, I wear the same stuff every.dang.day.
 
I wear my wedding rings on my left and a Tiffany ring Ted gave me for Christmas a few years ago on my right ring finger.





I wear diamond hoop earrings that Ted gave me as well
Sometimes I wear bigger diamond hoops my mom gave me, but daily, its the ones from Ted.

 
I have a Pandora bracelet my dad gave me the Christmas before he died (2010) with 3 charms on it. I have since filled it up with beautiful charms and wear that every now and then. I also have a good amount of Alex and Ani bracelets too, but bracelets are tough to wear at work so I usually only wear them on weekends or to events and stuff.
 
I have about 3 necklaces I wear...
A diamond twist from Ted
A diamond cross from my Mom
A diamond heart from my Dad
and a long layered necklace thing...
So so so boring!!
 
Here's why:
In the late winter of 2009 - when I had moved back home briefly, I was at a viewing with my mom for a friend who lost her dad. MY dad was doing an estimate (he was a builder) up north somewhere. When mom and I got home, we saw that our house had been broken in to.
My room got completely ransacked. Everything was taken.
I had a big armoire full of all kinds of jewelry.
Lots of statement necklaces, bracelets, fun rings, lots and lots of earrings...
I had my grandmothers ring, and my dads mothers (who passed before I was born) wedding band. Lots of sentimental items.
They also took my lap top and dads computer and lots of other things....
 
It was devastating.
And since then, I refuse to have a lot of jewelry...it's horrible
 *
My other favorite accessories are scarves.
I love scarves!
This winter, I got hooked on blanket scarves...
they are the best, so warm and cozy!
But I love allllll scarves....

My other favorite accessory is my Barrington bag! 
Ted got it for me as a wedding gift with my new initials on it.

I think I might spring for another one in the future... And this is what I have my eye on....



Last but not least... My Blardigan. 
Tessa loves it too. 
It's well worth the money. 
It's soft and comfy and warm. 
It's great to wear around the house or out paired with a cute top and leggings.
