Asian Chicken Bake
On Monday I made a chicken dish that I had tried over Christmas at my girlfriends house. Actually, it was at the Annual Sweet Swap that she made this chicken. It was so tasty and such an odd combo of ingredients!

Here is what you need:
Thin cut chicken breasts
1 part Soy Sauce
1 part Teriyaki Sauce
1 part water
Scallions, chopped
Petite diced tomatoes
Shredded cheddar jack cheese
Pyrex dish
Easy Peasy
Here is what you do:
Plop the chicken breasts into a freezer zip lock bag.
Dump in the Soy, Teriyaki and water
*I did a 1/3 cup of each for 1 1/2 pkts of chicken
Marinate for a good 3-4 hours (Overnight is best)
Remove from marinade.
Place onto pyrex and bake in oven at 300* for 20-30 minutes (Until cooked)
**You can also grill**
Once the chicken is cooked, throw on the diced tomatoes & scallions
Put back in oven for 5 minutes
Pull out of oven and sprinkle cheese on top
Put back in oven again for 5-7 minutes until cheese melts

We had it with steamed broccoli & brown rice
It was quite yummy.
Something different than the norm, ya know?
So break out the pyrex and get crackin on this dish!
Happy Hump Day!
